Quinoa!
Compared to oatmeal, the quinoa, a pseudocereal also known as 'Inca rice', it is richer in protein with all the essential amino acids, plant fibers, B complex vitamins, potassium and magnesium. It does not contain any gluten, its taste is quite similar to that of brown rice, however it has a bitterness if not washed very well before cooking, and can be used instead of oatmeal or rice or couscous in many recipes, B.C. boiled in water or chicken stock, as a vegetable filling, along with all kinds of legumes, with meat, yogurt or as breakfast replacing cereal flakes.
1 cup cooked quinoa (170 gr.) yields around 180 calories, 7 gr. proteins, 32 gr. carbohydrates and 3 gr. fat.
